I mixed two of my favorite things: pumpkin and energy bites and came up with these yummy Pumpkin Chocolate Chip Protein Bites !

This recipe takes 5 minutes in the kitchen and is a healthy, vitamin packed snack that will last all week. You can switch this recipe up to fit your diet restrictions or to your liking. I like to add in chia seeds for some extra vitamins. Did you know chia seeds have more potassium than a banana, more calcium than milk, more antioxidants than blueberries and more omega-3’s than salmon?! I LOVE adding them to my day. I notice a huge burst of energy, they help me sleep even better (What mom doesn’t need help sleeping??) aide in digestion and help fight inflammation. Clients, is this starting to sound familiar?! The best part about them though is I can sneak them into my son’s diet. I am a HUGE believer in kids needing magnesium, calcium and omega’s to prevent ADD, ADHD, anxiety and more. Adding super foods like chia seeds and flaxseed will add in those vitamins!

So back to these beautiful little bite sized healthy desserts. They will surely satisfy your sweet tooth and are the PERFECT pre-workout snack or a little mid-afternoon pick me up. I recently started the Couch to 5K App and needed a little snack before I ran and found that these are literally the best thing EVER so I don’t have to cook right when I wake up and they fuel me through my run without filling me up!

Pumpkin Chocolate Chip No Bake Protein Bites
These no bake Pumpkin Chocolate Chip Protein Bites are the perfect healthy on the go snack. They are packed with vitamins and minerals, fiber and protein. They are Gluten Free, Vegan, Dairy Free and Paleo.

Instructions
  1. In a large bowl combine pumpkin puree, applesauce, maple syrup, pure vanilla extract, cinnamon and pumpkin pie spice. Whisk until well combined and no chunks remain.
  2. In a medium bowl combine flour, oatmeal, protein powder, flaxseed and chia seeds. Whisk until combined.
  3. Pour flour mixture slowly into liquid mixture and stir until it thickens and you get a dough like consistency.
  4. Fold in chocolate chips. Place in fridge for at least 1 hour. (Can do freezer if in a pinch)
  5. Remove from fridge and roll with hands into 1 inch bite sized balls.
Recipe Notes

-If avoiding gluten completely I would suggest Gluten Free Oatmeal.

-You do not have to use Organic Pumpkin Puree but it makes a huge difference in taste. I find it tastes a lot better and more flavorful!
